Food that I can eat without getting sick? It's a wonderful thing.
So, I've been 100% gluten free for over 6 months. It is so wonderful to have "normal" stomach aches again – as opposed to the nasty food-poisoning type stomach aches I used to get before I knew what was causing them. Anyway, as baking has always been one of my passions, I've spent as much time as I can experimenting with gluten free baking.
I love, love, love baking and I like to think that I'm pretty good at it. However, gluten free baking has presented a new set of challenges to me. For one, not all recipes are easily adapted. And finding the right blend of non-wheat flour to match the taste of the rest of the ingredients is tricky. On top of that, when I do find the right taste, the batter/dough seems to bake differently...
So, today I tried out a Brownie mix that was kindly given to me by my friend Karina (at her own birthday nonetheless!). I tossed in some extra chocolate, white chocolate, and butterscotch chips for fun. And now I'll test it out on Boyfriend before I subject it my co-workers tomorrow.

Paddy's Day Shoes
About 5 years ago I was shopping with Bear. This, as some of you may know, can lead to awesome (read "sometimes disastrous") purchases of things that we may not really need. Most recently, we both bought Betsy Johnson dresses with Pterodactyls on them. Did we need these? No. Was it a fashion imperative that we buy them? Oh, yes. There were Pterodactyls on them!
Anyway, 5 years ago we wandered into the shoe department at Nordstroms and I was immediately taken with these amazing green heels. I rolled up my jeans and I strutted all around the shoe department. Bear had located the same pair in blue and was also trying them on, which is just shows how awesome we thought they were because Bear almost never wears heels.
"I must have these!" I informed the shoe guardian.
So, I bought these amazing shoes and decided that I should wear them to my College graduation, you know, as a justification for buying them. Only, I quickly realized that a) the heels were way too high for me to walk into the graduation stadium with out falling because b) there is no ankle support! I ended up wearing flip-flops and then sitting at my Graduation lunch wearing the heels so I didn't have to walk much. Fantastic. Another useless purchase…
Except that they haven't just stayed in the box collecting dust. I have worn these shoes at least 5 times – I wear them each year on Paddy's Day! I remember the first time I wore them for this occasion because my friend Siobhan and I went to every grocery store and liquor store in the Monterey area looking for Smithwicks… needless to say, they weren't the best shoe of choice for a park, run into the store, run around the isles, and run back to the car kind of mission. At least this year, with my desk job, I should be fine…
Also, in honor of St. Patrick's Day, I decided to make treats for the office (like I need an excuse) and I was excited to try out this recipe, albeit slightly modified to be GREEN! Judging by the fact that I don't typically like brownies and yet I tried to eat my weight in the batter, I would say these were a success. My only fear was that they might end up looking moldy… Instead my co-workers asked me if I had any "special" ingredients in them!
And then tonight, I will probably kick back with my favorite Irish beer, the aforementioned Smithwicks (pronounced without the W), and watch either Darby O'Gill and the Little People and/or Father Ted. And possibly eat some greenish food of some sort. My shoes will be sitting on the floor next to me, looking pretty.

- The Boondock Saints (1999) : I can't believe I forgot to add this to the list – this is one of my favourite Irish inspired films. A uniquely told story of two Irish emigrant brothers who become vigilantes after a rowdy St. Patrick's Day. Fun drinking game: drink every time they use the F-word.
- The Commitments (1991) : One of my all time favorite movies about a group of Working class Dubliners (Northsiders) who form a Soul group. Amazing music, fun story, generally considered one of the best Irish films ever.
- Darby O'Gill and the Little People (1959) : A Disney production based off of a collection of Leprechaun stories about Darby O'Gill catching King Brian, King of the Leprechauns. This staple of my childhood features a ton of Irish folk lore and creatures, plus a young (and singing!) Sean Connery.
- Father Ted (1995) : A Graham Linehan (IT Crowd) sitcom about 3 Irish Priests who live on Craggy Island, isolated off the coast of Ireland. Very funny and absurd, and though you don't need to be Irish or Catholic to find it funny, being so adds a whole new dimension.
- Intermission (2003) : A love story/crime caper set in modern Dublin involving a breakup, a bank robbery, and a ton of Brown Sauce. As a drawing point, it stars Cillian Murphy and Colin Farrell. Oh, and Colm Meaney – he's in everything (including my flight from Dublin to LA once)!
- Once (2006) : I'm sure you've heard of at least this one. A musical of sorts played out in modern Dublin. Very low budget but beautiful music and nearly perfect. Fun fact: Glen Hansard was also in The Commitments.
- The Quiet Man (1952) : If you've never seen or heard of this, you may be surprised to find a movie featureing John Wayne on this list. He plays an Irish-American who returns to Ireland to reclaim his family's farm. Known for it's famously long fight scene, it's a classic that I grew up watching with my Grandparents.

EndlessRecipes : White Chocolate Raspberry Cupcakes
I'm famous in some places for my CookieMuffins. And by famous I mean, I once had lunch with an ex-coworker and he said, "You know what I miss most about you? Your CookieMuffins." I even have a note on my computer at work requesting more after I brought a batch in during my first week of the new job (and that's the secret to my success!).

But this isn't about my CookieMuffins except to say that they are a bit predictable at this point. People expect me to make CookieMuffins for all occasions now, so in an attempt to change things up a bit, I decided to make Cupcakes for Valentine's Day. Once I had decided on cupcakes, then came the week of trying to figure out what kind of cupcakes to make...
At first I had decided on baking hearts into the cupcakes as seen over here at Bake It in a Cake! I still want to try this, but I only had Sunday afternoon to bake and I felt that this might have a high failure rate (on my part, that is). I wanted something a little safer to bring to work the next day. I ended up back at the cliche idea of Red Velvet cupcakes – they are easy and everyone loves them...
But as I was getting ready to go buy what I needed a thought occurred to me: PINK VELVET! So, I went to the internets and found some recipes for Pink Velvet. Most seemed to replace the cocoa powder with white chocolate to give the cupcake a chocolaty taste, but to keep the batter pink. And then another twist presented itself to me in the baking aisle when I discovered a premium White Chocolate Vanilla Raspberry bar...
Thus the creation of my newest sweet hit: The White Chocolate Raspberry Cupcake with Cream Cheese Frosting! (Recipe adapted from here)
Pre-heat the oven to 350˚and line normal sized cupcake tins with liners (I like pretty coloured ones).
In a smaller bowl, combine the flour, baking powder, and salt.
In a large bowl, with an electric mixer, beat the butter at low speed until creamy.
Add the sugar and beat until fluffy, about 3 mins.
Add the eggs one at a time, beating well after each one.
Mix in the vanilla.
With the mixer on low, beat in half of the dry ingredients, then half of the milk. Repeat.
While all that is going on, melt your white chocolate selection. I used a makeshift double-boiler (heat safe bowl over a pot of boiling water), over low heat, string until it was melted to prevent burning.
Add the melted chocolate and beat until incorporated. Try not to over-beat the batter. It should be thick. At this point, you could also add the pink food colouring (about 1/4 teaspoon), but I liked the little pinkish flecks in the batter that came from the raspberries. Note: the flecks ended up cooking out, so next time I might use colouring in the batter, too.
Scoop batter into the lined muffin tins, filling them 2/3 full. I like to use an ice cream scooper – it's the perfect size and it has that little lever thing that gets all of the batter into the cup for you.
These baked about 25 mins in my weird messed up oven. Use the toothpick trick to be safe. Cool on a wire rack when they are done. They should be fluffy, with a slightly harder top. I was told the consistency reminded people of madeleines.
I do have a confession: I feel like I can't make good frosting and so I don't really try that often. Instead, I used Betty Crocker Cream Cheese Frosting (because it was 2 for 1) and dyed it to be a raspberry colour using a combination of red, purple, and pink gels – I had accidentally put in purple when I meant to use pink, but the colour turned out great anyway.

Valentines Day: Mixes and Cupcakes
If you know me, then you know that two of my favourite things are baking and music. And for Valentines day, I went all out with both. Aaaaand you'll know that doing a Valentine's post over a week later is about par for the course for me...
Anyway, for Boyfriend, I decided to make him a themed mix. Well, actually, it started with a vague Oldie's love song theme, but as I started to build it, 3 themes emerged. "Three themes?!" I thought to myself, "I'll have to make a Venn Diagram for something like that!" And I did!

I require pearls
I made my first from scratch Red Velvet cake with cream cheese frosting this weekend. It caused in to realize that I need a string of pearls. Yes, you read that right. Pearls.
Let me start over...
Last week they painted the inside of my flat. Without warning. It was kind of a disaster. And, gasp!, I had to bake for a dinner party I was going to. But, silver lining: I was able to use my Mom's newly remodeled kitchen to bake. It's like 5x as big as my kitchen and, right now, like a billion x less filled with paint dust
So, my mom comes home to find me mixing the last of the cake batter together - part dry, mix; part wet, mix; repeat. I'm pretty sure that she has no idea who I inherited my culinary skills from because all she can do is make scrambled eggs (but for the record, they are the best scrambled eggs ever. We call them "rubber eggs" because that's what her dad called them. I judge all other eggs by this standard... ) She seemed impressed by my use of the electric mixer that she got as a wedding present when she married my dad in the '70s. I'm pretty sure I'm the only one who has ever really put it to much use.
ANYWAY, I baked the cakes and then made my first attempt at cream cheese frosting all while watching Julie & Julia. I think they provided moral support of some kind because my frosting came out surprisingly well. I did a victory dance. Seriously. Then I licked the beaters.
This all has a point, though, I swear.
See, the dinner party was on Saturday night and I was putting all this together on Friday night because I had to work on Saturday during the day. So, I bring my cakes back to my newly painted flat with the plan of frosting and assembling the layers after work before the party.
The next day I get off work, take a quick shower, and change for the party. I decided to wear a vintage style dress. I throw an apron over the dress and assemble and frost the cake. It actually looked pretty good, too!

Then I realized that my friends were coming over to carpool to the party and that my house was still covered in paint dust. Which is why I was holding a broom and sweeping the house in a vintage dress, heals, and an apron when they all arrived.
All I was missing was the pearls.
